Our baked eggs in cheese recipe uses two different types of cheese; one curmbly and one stringy. We use either Lancahsire crumbly or Wednesleydale for the crumbly option, and Cheddar for the string version. However, you can replace these with any similar varieties of cheese you wish. An easy recipe for baked eggs in cheese- a deliciou and hearty breakfast or lunch option.

Ingredients

  • 5 free-range eggs

  • 6 oz crumbly cheese

  • 2 oz cheddar cheese

  • 8 tbsp milk

  • Black pepper to taste

Directions

  • Preheat the oven to the highest hear.
  • Grate both cheeses into a bowl and mix with one egg, the milk and black pepper to taste.
  • Divide the mixture into four ramekins, then transfer to the oven for five minutes so the cheese is fully melted.
  • Remove the ramekins from the oven and make a well in one pot of cheese. Crack an egg into the well and then repeat with the otehr three ramekins.
  • Return the ramekins to the oven and cook for 5-10 minutes until the eggs are cooked through but still soft and the cheese has turned golden on top.
  • Remove from the oven and serve either alone or with your favourite bread for dipping.
