Carrot and Coriander Soup: Easy Soup Recipe

If you want a low-budget meal, there are few that can beat carrot and coriander soup in terms of cost. Although this is a cheap soup to make, it still has plenty of flavours and is packed with nutrients.

The addition of coriander, also known as cilantro, gives this carrot soup variation a fresh flavour. Furthermore, this healthy soup is a great option for vegetarians, vegans, and those following a gluten-free or dairy-free diet. It’s easy to make either in a pan or a soup maker.

Here is an easy recipe for carrot and coriander soup that serves four to six people.

An easy and delicious recipe for carrot and coriander soup, which combines European and Asian flavours.

Ingredients for Carrot and Coriander Soup

  • 450g/ 1 lb carrots, peeled and sliced

  • 1 onion, chopped

  • A handful of fresh coriander/ cilantro, chopped

  • 1 tsp of ground coriander

  • 1.2 litres/ 2 pints vegetable stock

  • 2 tbsp olive oil

  • Salt and freshly ground black pepper

Directions: How to Make Carrot and Coriander Soup

  • Heat the oil in a large pan over medium heat, then add the onions and carrots.
  • Next, cook for 5 minutes, until the carrots and onions begin to soften.
  • Add the ground coriander and season with salt and pepper, then stir and cook for a further two minutes. 
  • Then, add the vegetable stock and bring to a boil, then reduce the heat and simmer for 20 minutes.
  • Either use a hand blender to blend the ingredients together, or blend them in a food processor before returning them to the pan. 
  • Stir in the fresh, chopped coriander/ cilantro leaves and cook for a few minutes before serving. 
  • Add some extra fresh coriander to the top of your soup as a garnish if you wish.
  • If you are preparing this soup in advance, let it cool before refrigerating or freezing.

Extra Tips for Making Carrot and Coriander Soup

1. Sweat the vegetables slowly for deeper flavour

Let the onions, garlic, and carrots cook gently for at least 10 minutes before adding stock. This caramelises the natural sugars and gives the soup a richer, sweeter base.

2. Use fresh coriander stalks for extra aroma

Coriander stalks have even more flavour than the leaves. Add the stalks while the soup simmers, then stir in the leaves at the end for a fresh, bright finish.

3. Toast your spices

If you’re adding ground coriander or cumin, toast them in the pot for 30 seconds before adding the stock. This wakes up the spices and boosts the soup’s warmth.

4. Adjust thickness to your liking

  • For a silky, smooth soup, blend longer and add a splash more stock.
  • For a chunkier texture, pulse the blender or remove a ladleful of veg before blending and stir it back in.

5. Add a swirl of richness

A spoonful of crème fraîche, coconut milk, or Greek yoghurt adds creaminess without making the soup heavy.

6. Brighten the flavour at the end

A squeeze of lemon juice or a pinch of salt right before serving lifts the whole dish.

1. Cool completely before storing

Let the soup cool for 30–45 minutes. Storing it while hot can cause condensation and shorten its shelf life.

2. Refrigeration

  • Store in an airtight container.
  • Keeps well for up to 4 days.
  • The flavour often improves by day two as the spices develop.

3. Freezing

Carrot and coriander soup freezes beautifully.

  • Freeze in portions for easy reheating.
  • Leave a little space at the top of the container for expansion.
  • Keeps for up to 3 months.

4. Reheating

  • Reheat gently on the hob, adding a splash of water or stock if it has thickened.
  • Stir well to recombine ingredients after freezing.

5. Avoid freezing dairy additions

If you plan to freeze the soup, don’t add cream or yoghurt until serving, as dairy can split when frozen.
