Tourlou Recipe: Easy Greek Vegetable Soup

Tourlou, or Briam, is a traditional Greek vegetable soup that is so hearty and packed with veg that it could also be considered a vegetable stew. It typically contains various summer vegetables, and recipes can vary considerably. Our tourlou recipe retains the original ingredients typically associated with Greek food.

The dish typically includes courgettes (zucchini), aubergines (eggplant), potatoes, onions, and tomatoes and is flavoured with oregano, garlic, and olive oil. One way to cook the dish is to layer the vegetables in a baking dish and then bake them in the oven until caramelised and tender. A simple recipe for tourlou, a traditional Greek vegetable stew.

Ingredients for Tourlou

  • 2 potatoes, peeled and diced

  • 1 large aubergine/ eggplant, diced

  • 1 large courgette/ zucchini, diced

  • 1 brown onion, diced

  • 2 large carrots, diced

  • 400g tin of chopped tomatoes

  • 3 tbsp extra virgin olive oil

  • 3 cloves of garlic, minced

  • 1 tsp dried oregano

  • 300 ml vegetable stock

  • Salt and freshly ground black pepper to taste

How to Make Tourlou

  • Preheat the oven to 180 °C and prepare all the vegetables before adding them to a deep baking tray.
  • Put a pan over medium heat and add the olive oil.
  • Add the garlic and sauté for a minute or two, then add the chopped tomatoes, vegetable stock, and oregano.
  • Simmer the mixture for five minutes, then pour it over the prepared vegetables.
  • Cover the vegetables with a layer of baking paper, then seal the deep baking tray with aluminium foil.
  • Put the baking tray in the oven and cook for approximately 40 minutes.
  • Serve as soon as you take the dish from the oven.

Additional Tips for Making Greek Vegetable Soup

  • A tasty garnish for the popular Greek soup is a sprinkling of feta cheese. Do not use it if you want a dairy-free or vegan soup.
  • If you are not an oregano fan, try using basil or rosemary as alternatives to flavour the dish.
  • To make the dish thinner, if you are eating it as soup rather than a vegetable stew, add more vegetable stock or water to the tourlou recipe.
