Tomato, Courgette, and Pepper Soup – Easy Recipe

Even a culinary novice can whip up a soup, as it is one of the easiest dishes to make. This tomato, courgette, and pepper soup is quick and simple to make and is perfect as either a starter or a family meal served with bread or croutons.

It is equally suitable as a warming dish in the winter months or a refreshing one in summer. Tomato soups are popular options as they are full of flavour and look aesthetically pleasing in the bowl. An easy recipe for tomato, courgette and pepper soup, which you can serve either chunky or smooth with an accompaniment of your choice.

Ingredients for Tomato, Courgette and Pepper Soup

  • 1 tbsp olive oil

  • 3 medium courgettes (zucchini)

  • 1 red bell pepper

  • 1 yellow bell pepper

  • 2 tins chopped tomatoes

  • 1 onion, finely diced

  • Handful of fresh basil

  • 3 garlic cloves, minced

  • 1 litre of vegetable stock

  • Salt and freshly ground black pepper to taste

  • Optional: Sour cream or creme fraiche to serve

Directions: How to Make Tomato, Courgette and Pepper Soup

  • Chop the onions, peppers, and courgettes, then crush the garlic.
  • Heat some olive oil over medium heat in a large pan.
  • Add the chopped onions and peppers and cook until softened.
  • Add the crushed garlic and chopped zucchini (courgettes).
  • Pour over the vegetable stock, bring to a simmer and then stir in the tinned tomatoes.
  • Season the soup with salt and black pepper to taste.
  • Take most of the fresh basil and roughly tear it before adding to the pan. Save some basil to garnish the top of the soup.
  • Cook the soup for 20 minutes, then remove it from the heat and let it cool for a while.
  • If you want a less chunky soup, blend it with a blender or a handheld blender to your preferred consistency. You can do short, sharp blasts to make a thicker soup that still has whole chunks, or completely blitz the soup for a smooth consistency.
  • Serve into soup bowls, then add a swirl of soured cream or crème fraîche and a sprig of basil, and serve alone or with croutons or warm, crusty bread. 

Tips

  • Tomatoes: Use fresh tomatoes if you prefer.
  • Garlic: Optional, it just adds an extra level of flavour. If you are not a fan of garlic, leave this ingredient out. 
  • Spice it up: If you are a fan of spice, it is simple to add some spiciness to this dish. Either add chopped chilli or some paprika to the dish; both work well.
  • Peppers: You can add any colour you like. I only use one red and one yellow for the colour.
  • Serving: Serve this either warm or chilled.
