An easy and delcious recipe for broccoli and Stilton soup, a British classic.

Ingredients for Broccoli and Stilton Soup

  • 2 heads of broccoli

  • 5 oz. / 140 g Stilton (or other blue cheese)

  • 1 small onion finely diced

  • 2 sticks of celery

  • 1 medium white potato peeled and diced

  • A knob of butter

  • 2 tbsp. olive oil

  • 1-litre vegetable stock

  • 1 tsp dried parsley

  • Salt and pepper to taste

Directions: How to Make Broccoli and Stilton Soup

  • Chop the end of the stalk from your broccoli heads, then break off the florets and dice the remaining stalk.
  • Peel and dice the potatoes, chop the onion, and slice the celery.
  • Heat the oil in a pan over medium heat and add the onions, potato, and celery.
  • Sautee for a few minutes, then add the butter and cover with a pan lid, then cook for a further five minutes.
  • Add the stock and the chopped stalks of the broccoli.
  • Simmer for 10 minutes and then add the chopped broccoli florets.
  • Simmer for a further 5 minutes before adding the parsley.
  • Either transfer the mix to a blender and blitz before returning to the pan, or blitz it with a hand blender.
  • Add the crumbled Stilton and stir through until most of the Stilton pieces are melted.
  • Season the soup with salt and pepper before serving.
